Rated 4 out of 5 by from good machine I have several restaurants. I have used Vulcan in the past and found them to be well made. Recently I purchased a unit that was cheaper in price but the quality was less. When you purchase your oven decide what it will be used for. Are you using it to just warm food or for baking and cooking. If you are just warming food get the most simple unit. It will be the easiest to troubleshoot plus finding alternative replacement parts will be less. Vulcan parts tend to be more expensive. I prefer doors that open seperately because there are less moving parts and adjustments. Doors that open together require chains connecting together thus more adjustment. Most the time you will open only one door. If you do purchase a unit with doors operating seperately make sure you ask your cook if he wants the left or right door to open first. This unit you must open the right door before you can open the left door. If you have only one door and not a two door entrance make sure you measure your door way. It may not fit thru in its operating position. You may have to place it on its side on a little furniture dolley to get it in. After you put the legs on it will take three people to lift into position. 2 to lift and on to stop the legs from sliding as you lift. It would have been nice it they would have made a shelf rack for the legs so you could store pans or plates underneath but you can get a 24"x24" table to fit you just have to cut the legs to fit. If at a future date more capacity is needed, could a second unit be purchased with a conversion kit so that a double deck can be made?

Yes, if you find out later that you need a second oven a stacking kit and shorter legs can be purchased to stack the two and make it a double deck.

What are casters?

Casters are optional wheels that go under the legs of the unit. The front two lock to keep the unit in place once installed.
