Yet, as you examine the many different grease trap sizing options, how can you know which one is the right fit for your kitchen? In this video, Dami shares on the two most important factors in selecting a grease trap size, so you can be well equipped to make the right decision!

Hi, this is Dami from Prima Supply. And I'm here to talk to you about how to size your grease trap. Now, there are two factors that you need to keep in mind as you consider sizing a grease trap for your restaurant. The first being the local jurisdiction and the second being the grease production rate in your restaurant. So, starting with the first, your local government will have a prescription for you on the size of the grease trap that you need for your restaurant. So, for instance, let's say, the local government where you're located prescribes a GI-40 which is what we have here. Then you want to at the least make sure that you have a grease trap that meets this specification. To get a grease trap that doesn't meet this would be, essentially, you breaking the law and you do not want to do that.

The second factor that you need to consider, as mentioned earlier, is the grease production rate in your restaurant. Now, the local government doesn't really...isn't really concerned about the type of restaurant that you have and this why this second factor is a major factor. We all know that a sandwich restaurant...a sandwich shop doesn't produce as much grease as an Italian restaurant. So, you want to keep that in mind and figure out really how many customers do you get on a daily basis and how much grease does your restaurant actually produce. So, the two factors are really key and really essential. So just to recap, you need to consider what the local government says and you also need to figure out what...how much grease your restaurant actually produces. In comparing these two factors, you should be able to nail down a well-sized grease trap that should meet the particular needs of your restaurant.
