As winter draws closer, there's not a more comforting meal, than a hot bowl of potato soup. For me, it is all kinds of creamy, warm nostalgia, taking me back to those overcast days where the wind makes it just too cold to play outside. Everyone in our home is gathering around the space heater watching a holiday movie.
It's time for dinner and the despair from departing away from the space heater dissipates as your hands are warming up around a fresh hot bowl of soup. The best thing about it is it's so simple to make, and you can literally add anything you want on it- green onions, chives, bacon, cheese, or throw in some leftover Christmas ham. Basically, it's the kind of meal where everyone can have it their own way. Everyone's happy and there's nothing to it. Here's what you need:
Real Simple Potato Soup
Recipe from Kha Do | Prep time: 40 minutes | Yield: Serves 4-5Ingredients
- 1/4 cup of butter
- 1 onion (diced)
- 2 Tbs of garlic (chopped)
- 3-5 Rustic potatoes (cubed)
- 1 Tbs of Basil
- 1 Tbs of Thyme
- 1 quart of chicken stock
- 1 cup of half and half
- Salt and pepper
- Cayenne pepper sauce
- Worcestershire sauce
Instructions
- First, in a large pot, sauté the diced onion and chopped garlic in butter.
- Then add the chicken stock with the potatoes, basil, and thyme.
- Cover with a lid and simmer for about 30 minutes, until the potatoes are tender.
- Once your potatoes are cooked, purée it with half and half. You can use an immersion blender, or I like to use a vitamix blender for a smoother and cleaner set up. If you’re using a vitamix blender, be sure you do not fill it up all the way.
- Only fill up to the max capacity line, and with a towel held over the top, start on a low and gradually increase the speed until you have a smooth consistency.
- Add a dash of cayenne pepper sauce and Worcestershire sauce.
- Salt and pepper to taste, and serve with a host of toppings.
