Emulsified dressings work out really well in the aerating container. For this recipe I'm going to show you how to make a raspberry tarragon vinaigrette using our Vita-Prep 3 in the aeration container. The ingredients we'll need for this are some apple cider vinegar, some fresh raspberries and tarragon, some dry mustard, salt, and pepper. We'll also use some olive oil that we'll add in later in the blend when we're emulsifying everything together. We'll put the lid on our container and place our container on the blending base. We're going to take this from one to eight for about 35 seconds and then we'll reduce it to variable four and add the oil in through the lid plug opening. In a quick 45 to 50 seconds you've got a great emulsified dressing.
Some advantages of why I like using the aerating container in dressings is that you're able to complete smaller customized batches in the 32-ounce container, and the disc blade allows for tighter emulsions without over processing these delicate ingredients. That I think your customers will appreciate the natural ingredients and seeing them in the actual blend, rather than using pre-processed items. A nice fresh dressing to top our salad.
